I’m a big fan of quick, simple meals. I’m typically not in the mood to cook an elaborate dinner after work, especially since it’s just the two of us. That cuts into my wine-drinking time. I often rely on my crock pot this time of year, but lately we’ve traded it in for our cast iron dutch oven. I’ve never used a cast iron skillet or dutch oven, but we’ve created fabulous recipes- I don’t think anything else can emulate the flavor.
Last night I threw together a quick dinner for us: turkey sausage and bean soup. I pinned a couple of sausage and bean soups on Pinterest, but ultimately used a recipe given to me by a coworker. She made it for our fall luncheon and I’d been dying to give it a whirl. I inexplicably had all of the ingredients on hand and whipped this up in about 30 minutes.
