I unexpectedly (and thankfully) got a three day weekend. We went to an amazing restaurant in Louisville Friday night to beat the Valentine’s crowd and bad weather and spent Saturday and Sunday relaxing, cleaning, and cooking. After much anxiety, I decided to take off Monday due to receiving a foot of snow, the most we’ve encountered since the mid 90s!
Being at home for three days meant lots of cooking. I’m not a big baker but I needed chocolate. Brownies are my weakness but I wanted a healthier alternative to the boxed, processed treats. I also required a simple recipe that used ingredients I had on hand. Given all those requirements, I believe I found the perfect recipe on Cook Like a Cavewoman that was NOT a Pinterest fail!
What you need:
2 tablespoons ghee (can substitute with 2 tablespoons of butter)
1/2 cup creamy almond butter
1/4 cup honey
1 tsp vanilla extract
1/3 cup cocoa powder
1/2 teaspoon baking soda
*Optional- handful of chocolate chips
Preheat oven to 325. Grease an 8×8 pan (to keep it Paleo-friendly, use coconut oil). Combine eggs, ghee, vanilla, almond butter, and honey and stir until well-combined. If you use butter, make sure to soften in the microwave before adding to other ingredients. Stir in cocoa powder, baking soda, and, if desired, chocolate chips. Pour batter into dish and bake 24-26 minutes (24 was perfect for my oven).

I was apprehensive; I honestly thought these would taste nothing like the brownies I’m used to eating. I was pleasantly surprised at the delicious flavor and cake-like texture. These brownies are marketed as Paleo-friendly because they don’t contain dairy, grain, or refined sugar- I unfortunately had to use butter so mine were not Paleo. Regardless, these are a much healthier treat than traditional brownies… I don’t think I’ll ever make boxed brownies again!
