Hey friends, hope you’ve had a great week! I’ve been out of touch – between work and life, things have been crazy. Thinking of all you in Matthew’s path!
Fall is the start of soup season, and honestly, what’s easier than throwing a bunch of ingredients into a dutch oven or crockpot (my cookware of choice)? It’s the ultimate comfort food. Here are five soups to try this year:
White Chicken Chili: My fall and winter go-to. As I say in the recipe, trying it with Rotel gives it an extra kick!
Cheddar Beer Soup: Okay. Nothing about this soup is healthy. But pair it with a seasonal beer and some pretzel bread and you’re a happy camper! I struggle with dairy and opted for Lactaid. I also cut back slightly on the cheese. When I tell you the stomachache was worth it, I mean it. 🙂
Smoked Sausage, Kale, and Potato Soup: Lactaid for the win again! This actually calls for soy milk, but I’m not a fan. I thought using almond milk would give the broth a strange taste. J ate it two nights in a row, so it was a success!
Tomato Basil Soup with Cheese Tortellini: Tortellini is a weakness for us both so we make this soup a few times a year. It’s one of our favorites and one of the easiest to prepare! Also looking forward to trying Leanna’s Crockpot Tortellini Soup!
Sausage and Bean Soup: Again, Rotel steals the show here. I love the unexpected kick! We threw out our cast iron dutch oven earlier this year, but I’m currently using a ceramic alternative and it’s great. Can’t wait to make this household favorite this season! *Please excuse the picture quality. I’d yet to migrate to WordPress.
